For individuals who enjoy eating fish, they should try out caviar. This is a delicacy whose main ingredient is the unfertilized eggs of the sturgeon fish. Though with time, cheaper varieties are available as the eggs can be obtained from different types of fish.

Knowing the different types of dishes will help you differentiate among them. The eggs are obtained from the sturgeon fish. There are three types of sturgeon fish. These are Beluga, Sevruga or Osetra.

The beluga fish is quite scarce. This means that finding them can be quite a task. Subsequently, eggs from this fish are very valuable and are usually quite expensive, so that wealthy families are the ones who can indulge in this delicacy. The eggs from this fish are grey in color.

Though the dish is quite widespread at the moment and is served in many parts of the world, it has its roots in Russia. Most Russians enjoy the meal.

When purchasing the eggs, keep in mind that they are available in two varieties. This is fresh eggs and pasteurized eggs. Fresh eggs need to be kept under constant refrigeration since they are easily perishable. Pasteurized eggs have been slightly cooked hence; they can be preserved for a longer duration of time.

Fresh eggs are extremely perishable and should be refrigerated at all times. The pasteurized version is more durable and mostly it is not a must for them to be refrigerated. It is best to read the label on the package when purchasing the product so as to know how to handle it in the best way possible. Most food companies will indicate the type of fish where the caviar was obtained from.
