All About Cheese

Cheese is just one of the many dairy products most people eat every day. It is made from the proteins and fats found in milk. Many are made from the milk of cows and goats, but there are also some made from sheep milk and even buffalo milk. A protein found in milk called casein coagulates to form cheese. An enzyme called rennet is added to the milk that starts the curdling process. Once the milk solids have formed, they are separated from the liquid whey and pressed.

There are more than a thousand different kinds made all over the world. They are different in texture, flavor, and style. There is a difference in the cheese depending on whether it has been pasteurized or not, what kind of processing it has, how much butterfat is included, how long it ages, and what molds and bacteria have been introduced. Some also have additional flavorings like herbs, wood smoke, and spices.

It has historically been a way to preserve milk. It has a long shelf life and is easy to transport. It is believed that cheese making began sometime between 8000 BC and 3000 BC. The exact history is unclear, but it may have been a happy accident. Milk and other liquids were routinely stored in animal skins in the Middle East and central Asia. Milk may have curdled inside some of these bags and separated into curds and whey. Milk that had curdled could also be salted and pressed to preserve it. This was the beginnings of making cheese.

That luscious brown candy we know as chocolate originates with the cacao tree from Central America. Cacao pods were picked by the ancient Aztecs and Mayans to process into a powder. This powder was mixed with spices and made into a frothy, bitter drink. The word "chocolate" comes from xocoatl or chocoatl, which means, "foam water."

When the Spanish discovered the people of Mexico, they were treated to this drink. They took it back to Spain, where cooks created new recipes with it. Spain kept it a well-hidden secret for about 100 years. Once the rest of Europe learned about it, drinking hot chocolate became very popular among the rich and powerful. Over the next 300 years, the well-to-do in Europe drank their hot drink in special dishes designed just for this beverage. These sets are very hard to find today.

The Europeans added sugar, cinnamon and other spices to their hot chocolate drinks. Sweetened hot chocolate became popular throughout Europe. Hot chocolate was made by melting hardened chocolate in cream. To keep the stock available, many plantations were established to grow cacao. They were staffed by both paid laborers and slaves.

In the 1800s, mass production was introduced to the industry. More people had access to it and it became an affordable treat. Inventions like the cocoa press made it possible to make creamy, smooth treats that could be eaten as well as liquid versions for drinking.

Chocolate desserts became popular all over the world. Cakes, pies, candies and more were made with chocolate. Mexican desserts also took advantage of the new forms available. The place where it has always been grown and harvested has taken advantage of many of the new methods of processing.

You can now get three types of it: dark, milk, and white. All forms of brown chocolate get their coloring from the cocoa solids used to make them. Dark versions have more of a bitter taste, while milk versions have been sweetened. White chocolate is not considered to be true chocolate by many people since it contains no cocoa solids, only cocoa butter.

Everyone loves homemade cookies, as they taste much nicer than store bought cookies. There is something very comforting about a chocolate chip cookie fresh from the oven, and they smell heavenly. It helps to understand why certain ingredients need to be used in cookies.

The main ingredient of cookies is flour, and its important because it adds colour and flavour, and also some nutrients. Flour contains a lot of starch, and it is this that holds the shape of the cookie, and helps the dough to expand while cooking. Egg yolks give the mixture a richness an more flavour, while the egg whites offer additional strength and also stability.

It is nice to use butter in the mix, although other fats can be used. Butter makes a richer mix, and helps the dough to rise as it traps air during mixing. A good mixing technique is to use a figure of eight action to combine the ingredients together. Make sure that you shape the cookies according to the recipe, and check the oven frequently to ensure they do not burn.

A simple cookie recipe can involve as few as six different ingredients. These are flour, sugar, butter, salt, one egg and baking powder. Just mix five cups of flour with three cups of sugar. Add one and a half teaspoons of salt and two tablespoons of baking powder. Add one and a half cups of softened butter to the dry ingredients and combine until the mix is crumbly. Mix in on egg and your cookie mix is ready. At this point you can add other flavourings such as chocolate, spices and vanilla. If you would like to make chocolate chip cookies, then just add one cup of chocolate chips and half a cup of brown sugar to the mix. Bake at one hundred and ninety degrees Celsius or three hundred and seventy degrees Fahrenheit for about eight minutes, then enjoy your homemade cookies.

The water that you cook the lobsters in can be used as a base for seafood soups, pasta dishes and casseroles. It will only add to the flavor of these dishes. You can also freeze the broth until it is needed.

An important thing to remember is too be sure the lobsters you are cooking is in good health. You can do this by looking at the tail it should curl under slightly when touched and should never be straight. Tails that are straight mean the lobster died too soon before cooking. Lobsters should always carry a fresh scent to them never anything overly fishy or foul smelling. If you are not sure then do not take a chance on becoming sick by bad lobster. To gain even more taste from them cook as soon as you can after delivery.

When preparing to cook your live lobster know that the hard shell takes longer to cook and the softer shelled ones take less time.

You can also grill whole lobsters on a hot to medium hot setting. Place the lobsters back onto grill and turn them once the shell turns a bright shade of red. Once turned cook about 5 minutes more until you think it looks done.

The restaurant was once the enlisted men's barracks, and its tin ceilings and fireplaces have been carefully restored. It's fronted by an old fashioned front porch, perfect for dining al fresco.

Then there's the star chef, Joseph Humphrey. In Murray Circle's first year, 2009, he won it a Michelin star -- and today it remains the only restaurant in Marin to have one. The choices are interesting and affordable. How about an oyster po'boy for only US$9? Organic popcorn dusted with chili-lime or truffle for US$5? Pork rilettes with homemade pork rinds (chicharrones) for US$10? Another tip: go for breakfast and sit on the front porch. With the glorious views, you can enjoy a classic eggs benedict or homemade granola. It's the best breakfast spot in Marin County.

As you might expect, staff is well trained and knowledgeable about the menu. And very attentive. We asked for the cream and sugar to be taken away from our table (we don't use it in our coffee), which it was. But then other servers tried to bring it back. Twice.

Great drink goes with great food. And here, too, Murray Circle does not disappoint. Director of wines Dan O'Brien seeks out small vineyards that use organic or biodynamic methods. From the bar, there are equally interesting options. You may want to try a house cocktail called a fennel sour. It's made from house-infused fennel vodka. Among the non-alcoholic standouts is something called the tide turner. Its base is pineapple juice, freshly squeezed, plus lime and pomegranate grenadine.
